Easy CottageCheese Egg Bites
Ingredients
- 8 large eggs
- 1 cup cottage cheese
- ½ cup shredded cheese of choice
- ¼ cup milk (optional for fluffier eggs)
- 1 cup mix ins of choice -spinach, bell peppers, broccoli, tomatoes, salt and Pepper to taste
Directions
- Preheat oven to 350 degrees Fahrenheit
- Line muffin tin with cupcake liners or grease pan
- Combine eggs, cottage cheese, milk, salt and pepper until fluffy and smooth
- Chop desired vegetables and combine with cheese
- Evenly distribute vegetables and cheese among muffin tins and pour egg mixture over vegetables.
- Bake for 25-30 minutes until middle is set and top is golden brown
- Let cool to remove from pan and serve
