Easy CottageCheese Egg Bites

Ingredients

  • 8 large eggs
  • 1 cup cottage cheese
  • ½ cup shredded cheese of choice
  • ¼ cup milk (optional for fluffier eggs)
  • 1 cup mix ins of choice -spinach, bell peppers, broccoli, tomatoes, salt and Pepper to taste

Directions

  1. Preheat oven to 350 degrees Fahrenheit
  2. Line muffin tin with cupcake liners or grease pan
  3. Combine eggs, cottage cheese, milk, salt and pepper until fluffy and smooth
  4. Chop desired vegetables and combine with cheese
  5. Evenly distribute vegetables and cheese among muffin tins and pour egg mixture over vegetables.
  6. Bake for 25-30 minutes until middle is set and top is golden brown
  7. Let cool to remove from pan and serve
