Loaded Sweet Potato Dinner

Ingredients

  • 1 Sweet Potato
  • ½ can of chickpeas
  • ½ tsp olive oil
  • ¼ tsp paprika
  • ¼ tsp cumin
  • Pinch of garlic powder
  • Salt and pepper to taste
  • Handful of Broccoli
  • ¼ avocado
  • 1 tbsp tahini
  • Juice of ½ lemon mixed with 1 tsp warm water to thin

Directions

  1. Preheat oven to 400 degree Fahrenheit
  2. Pierce potato with fork and bake for 40 minutes until tender
  3. While the potato is cooking heat a skillet with olive oil and add chickpeas. Cook for 5-7 minutes until crispy
  4. Steam broccoli and prep avocado and tahini
  5. Mix tahini with juice of lemon and water until creamy
  6. Once potato is cooked, cut open potato and lightly mash insides. Top with broccoli, chickpeas, avocado and tahini sauce
  7. Enjoy!
