Loaded Sweet Potato Dinner
Ingredients
- 1 Sweet Potato
- ½ can of chickpeas
- ½ tsp olive oil
- ¼ tsp paprika
- ¼ tsp cumin
- Pinch of garlic powder
- Salt and pepper to taste
- Handful of Broccoli
- ¼ avocado
- 1 tbsp tahini
- Juice of ½ lemon mixed with 1 tsp warm water to thin
Directions
- Preheat oven to 400 degree Fahrenheit
- Pierce potato with fork and bake for 40 minutes until tender
- While the potato is cooking heat a skillet with olive oil and add chickpeas. Cook for 5-7 minutes until crispy
- Steam broccoli and prep avocado and tahini
- Mix tahini with juice of lemon and water until creamy
- Once potato is cooked, cut open potato and lightly mash insides. Top with broccoli, chickpeas, avocado and tahini sauce
- Enjoy!
